Ingredients

  • One 12-pound heritage turkey
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  •  Sea salt and fresh pepper, to taste
  • 1 orange, halved
  • 1 lemon, halved
  • 1 head garlic, halved
  • 1 cinnamon stick
  • 1 teaspoon black peppercorns
  • 1 teaspoon anise seeds
  • 1 teaspoon coriander
  • 1 teaspoon juniper berries
  • 2 tablespoons sweet butter, preferably organic

Directions

Preheat the oven to 450 degrees, on convection, if available.

Prepare a sink big enough for the bird. Fill with hot water and 2 teaspoons salt. Wash the bird in hot water, pat dry, and let dry at room temperature.

Add 1 tablespoon olive oil to a roasting pan. Sprinkle with a liberal amount of sea salt and fresh pepper. Lay the bird on top. Liberally season with sea salt and fresh pepper. Sprinkle with the remaining olive oil. Place the remaining ingredients inside the turkey's cavity.

Place in the oven, and roast for about 8-10 minutes per pound. You will need to baste every 20 minutes. Spin the turkey around every 20 minutes to help brown evenly.

Remove from the oven and let rest for 1 hour, covered with aluminum foil.

Emails from our Readers

Dear Peggy Jo,

I received this in an email and I think your readers would appreciate the ideas.

Subject: A Great Gift Ideas for Christmas!
Christmas 2011 -- Birth of a New Tradition
Here are some of the suggestions on the list and some of my own. PJ

  • How about gift certificates from your local American hair salon or barber?
  • Gym membership? It's appropriate for all ages who are thinking about some health improvement.
  • Who wouldn't appreciate getting their car detailed? Small, American owned detail shops and car washes would love to sell you a gift certificate or a book of gift certificates.
  • Perhaps that grateful gift receiver would like his driveway sealed, or lawn mowed for the summer, or driveway plowed all winter, or games at the local golf course.
  • There are a bazillion owner-run restaurants -- all offering gift certificates. And, if your intended isn't the fancy eatery sort, what about a half dozen breakfasts at the local breakfast joint.
  • How many people could use an oil change for their car, truck or motorcycle, done at a shop run by the American working guy?
  • Thinking about a heartfelt gift for mom? Mom would LOVE the services of a local cleaning lady for a day.
  • Computer  tune-up, and you could find some girl or guy who is struggling to get his repair business up and running
  • If you are looking for something more personal. Local crafts people spin their own wool and knit them into scarves. They make jewelry, and pottery and beautiful wooden boxes.
  • Plan your holiday outings at local, owner operated restaurants and leave your server a nice tip.
  • nd, how about going out to see a play or ballet at your hometown theater.
  • Musicians need love too, so find a venue showcasing local bands.
  • Don't forget Sanders products or gift certificate to have lunch at the newly opened Sanders in Birmingham.
  • Charley's Mustards - a great stocking stuffer.
  • A gift account at "Send Out Cards"
Christmas is now about caring about US, encouraging American small businesses to keep plugging away to follow their dreams. And, when we care about other Americans, we care about our communities, and the benefits come back to us in ways we couldn't imagine. THIS is the new American Christmas tradition.

Pregnant Turkey Story

One year at Thanksgiving, my mom went to my sister's house for the traditional feast. Knowing how gullible my sister is, my mom decided to play a trick. She told my sister that she needed something from the store.

When my sister left, my mom took the turkey out of the oven, removed the stuffing, stuffed a Cornish hen, and inserted it into the turkey, and re-stuffed the turkey. She then placed the bird(s) back in the oven.

When it was time for dinner, my sister pulled the turkey out of the oven and proceeded to remove the stuffing. When her serving spoon hit something, she reached in and pulled out the little bird.

With a look of total shock on her face, my mother exclaimed, "Patricia, you've cooked a pregnant bird! At the reality of this horrifying news, my
sister started to cry.

It took the family two hours to convince her that turkeys lay eggs!

Yep.-----------She's blonde.

" I will praise God's name with song and exalt Him with thanksgiving."
Psalm 69:30

Crocker House Museum Trip

SUN 2011-12-04
Crocker House Museum The first mayor of Mount Clemens, Joshua Dickinson, built this Italianate house in 1869.
